How to Meal Prep for 2020
Meal prepping is something I swear by. It helps me save money, feel organised and eat more healthily - when I meal prep I feel like I’m already winning the week and if you haven't started doing this, do it now!

Quinoa, Rice, Veg & Cheese Fritters
I have been wanting to try an alternative quick and easy lunch for Henry for a few weeks now, sandwiches can become pretty tiresome and this little dude very much likes to experiment with food and try new tastes and textures. Whilst this is fantastic, I think all mums want this of their little ones, it does make it that more challenging. What to concoct next?!

Food inspiration
With the world of social media, internet and YouTube there is very little excuse for not having enough inspiration for meals. Despite this sweeping statement, there are times where I feel my cooking gets a little boring and the same meals seem to be on repeat.
I'm not the best cook, but I do love to experiment in the kitchen and try new recipes on my family. One area I really want to improve on is "clean eating" and improving our diet. Especially as I will be wanting to lose the baby weight soon. So where do I turn when I feel like I'm in a rut in the kitchen?

Garlic, Parmesan and Basil One Pot Pasta
Scouring Pinterest for a nice quick meal, I always stumble across one pot pasta recipes. They instantly appealed to me because the prep time is minimal and all you have to do once you put all the ingredients in is stir occasionally! Perfect for busy mums.
So here is a recipe I adapted to try out a one pot pasta dish.
Ingredients
1 table spoon olive oil
4 gloves of garlic, minced
2 cups of chicken stock
1 cup of milk
2 tablespoons of butter
Pasta
Salt & peper to taste
1/4 cup of parmesan cheese
Chopped parsley
Method
Heat oil in a large pan (I use a wok which worked well) on a medium heat, add garlic and cook for about 1-2 minuets stirring frequently.
Stir in chicken stock, milk, butter and pasta and then season to taste.
Bring to a boil then reduce heat and simmer until pasta is cooked (around 18 minuets).
Then stir in parmesan and parsley until sauce is thick. If you find the source too thick for your liking just add more milk.
Serve immediately and add parsley to garnish.
This dish is so delicious and everyone in the house finished theirs and asked for more. Massive hit for Darcie too!

Today, whilst in town doing a spot of Christmas shopping, Darcie asked if we could have cake. I told her that was a fantastic idea, but even better it we baked our own. A huge grin spread across her face and replied "yes please mummy". With that we headed home to bake.

Pasta & Avocado
I think I have hopped on this train rather late, but I have a new found love for avocado. Its not something I would normally buy, but kept seeing yummy recipes using avocado on Pinterest and knowing how good it is for you, I thought I would experiment a little with it.
So I threw together a few ingredients that I had in the cupboards and fridge and based the recipe on one I found HERE, and ended up creating a really tasty, and very simple, pasta dish. So what will you need?
